I had a great experience , 1. Food is excellent, Saurabh and team did take care of us well, Great Chef who prepared spl menu like Aapam for us, it was excellent , overall outstanding food all 6 days 2. Cleanliness 3. Swimming pool and staff in charge is helpful 4. Room Service super fast 5. Cabs, front office, everyone is super friendly, Room service person got us fevi quick , we didnt expect at all

The Hyatt Hyderabad Gachibowli is a well-located hotel for business travelers in Tech or Finance. I stayed in the last week of May in 2024. The breakfast is pretty good as you can order custom omelets as well as sweet breakfast waffles, french toast and other pastries. A good amount of fruit, though I don't eat the raw veggies or fruit in India. I enjoyed the little walking track around the hotel grounds in the morning and evening each day with the mornings from 5am-7am being the finest time. The grounds are pretty well kept with nice flowering trees and gardens, though you do still have the occasional eye sore from surrounding areas. I hotel rooms are cozy and clean. Decent, but not fantastic entertainment selections on the television. The showers are really nice with instant warm water and excellent water pressure. I experienced a few small power outages that corrected with backup power in under 10 seconds. All of this can be found at many nice hotels around India. The key difference with this hotel is that Chef Harsh Singh is working here. After a week of little sleep and a bit of a poor belly after some small ill-advised lettuce, I was on my last night with a brutal return flight at 4:30am that I am still questioning myself for. I came to the main restaurant at the hotel with moderate expectations and a plan to keep it simple. This is where Chef Harsh Singh casually stepped to my table and asked if I was eating the buffet. I am not a huge buffet guy, so I asked for a menu. He then suggested that I let him prepare something custom for me as I told him that although I love spicy mexican food, spicy indian food can really not be the best idea before a long flight. He seemed to understand and asked what sounded good. I told him the tandoori seemed like a safe bet. Simple and tasty, tender with just a little spice. Looking through the menu, I asked about tandoori chicken and maybe some curry and naan. He then suggested that maybe chicken tandoori and chicken curry could be too much of a single protein, so why not let him prepare a fish tandoori in a special way, replacing the red chilli with something more western friendly that would not irritate a sensitive stomach. I thought that sounded like a good idea. He then suggested that maybe we can also include some chicken kebab with some different spice profile, but also not too worry about too much spice or something that would not be great for a long flight pending. Pair that with some garlic cheese naan and follow it with a nice chocolate pastry. I told him that I was an absolute ice cream fanatic and he said, good, let's then add some vanilla ice cream to complement the chocolate mouse cake and he had my attention! What happened next was surprising. Chef Harsh Singh delivered on every single suggestion that he made and it turned out to be probably the best meal I've enjoyed over the past several months. I am not an instagram guy taking pics of his food everywhere, but the presentation was notable. I honestly wish that I would have taken photos as each one of these plates was more than a work of art. The tandoori fish was utterly perfect with tones of low spiced tandoori, crisped skin and then utterly butter flaky white fish (cod?) and I'm telling you I had a hard time slowing down! I almost licked the damn plate and realized that my sub 3 min effort on the fish was still ridiculous. I vowed to take my time on the next dish. Out it came, looking just as gorgeous as the first with 2 rounds of kebab chicken on a bed of cooked spinach and a sublime sauce that I swear helped me remember the fish without taking anything away from the chicken. I realized I was witnessing a true talent here and the amazing part was that he was literally coming to my table, checking my impression of each dish as if I was some sort of celebrity connoisseur. Shockingly good is all I can say. The garlic cheese naan was the best I've had maybe ever with an unmatched crispy softness that had me debating whether I should eat it plain... though I did not want to waste any of the delicious sauce coming with the kebab! OMG.... I embarrassingly gasped and oohed and aahed my way through dinner as surrounding guests eating the buffet tried to ignore my accolades. I'm telling you, it was DISTRACTING. I was floored. The chicken was perfectly spiced and cooked an the combination with the sauce, the spinach and the garlic cheese naan had me considering whether I should actually try to eat more. All of this paired amazingly well with a beer, but I have to say I barely touched it during dinner as I became a fanatic trying to recognize all of the distinct flavors he had put into this creation. The amazing part was that he had told me he would "size it special for me" so that I wasn't too bloated. Holy cow... he knew me. I don't know how he did it but the spice was utterly perfect and the proportion was just enough to make you think you want more... then a few minutes after devouring I realized I did not. I was content. At this point I'm asking for his name and card. He replied with the promised chocolate ganache cake and vanilla ice cream with a heated chocolate fudge sauce, which he poured over the pie/cake/dream/heaven bit in front of me. I was certain it was too much and I'd be bloated and rolling over... but no. The cake had what I thought was originally a pecan crumble... or was it toffee. Good God... how? The vanilla ice cream, remember I'm a fanatic, was almost forgotten yet the perfect complement to lighten up the richness of this heavenly slice. Best meal I've had in months... maybe years to be honest. My failure? Not engaging with Chef Harsh Singh on every other night I was there. It was sublime to say the least. I left with massive accolades for the guy... he probably thought I was crazed and I was! I met the managers and warned them that without a raise his very genuine artist of a chef may actually leave and decide to go make millions in Singapore or the United States with his own restaurant. It absolutely made my trip and I will certainly look forward to returning to Hyderabad so that I can hopefully experience this again. Mr. Chef Harsh Singh is an incredible talent who has intuition with his customers. He could gauge my taste buds through a small tableside conversation that I will not forget. He proportioned beautiful plates that I had to resist pouring straight down my gullet with an enthusiastic fervor that I haven't felt for a long time. Bravo to Hyatt Hyderabad Gachibowli for hiring this genius; now let's see if they can keep him around! He should get a massive raise; when the word gets out there will be lines at this restaurant and I realize that I'm truly lucky to have experienced the amazing custom creation he developed after a simple 5 minute conversation.
